Your exclusive Regattas NYE dining experience will start with a shared grazing platter featuring Smoky Bay oysters, salt and pepper whitebait, sardines on toast, arancini, chicken liver parfait, artisanal charcuterie and marinated olives accompanied by a selection of freshly baked breads. From there, you’ll be treated to a delicious second course of Cone Bay barramundi with clams, burnt urchin butter, asparagus, black lentils and fermented chilli, followed by whole roasted bone-in rib eye with smoked marrow butter, bacon jam, salt and vinegar roasted potatoes and Caesar salad. The evening will finish on a sweet note with Tutty Fruity Pavlova for dessert, featuring raspberry meringue, passionfruit curd, mango and pineapple crisps with sherbet.
